Crock Pot Cashew Chicken


My crock pot and rice cooker are my favorite small appliances we have.  I love them even more than my coffee maker, which really means a lot coming from this coffee addict!  I have an inexpensive crock pot, and it works fine for all of my recipes, but my rice cooker is AMAZING.  We have the Zojirushi NS-ZCC10 Fuzzy Logic:



You might think I am out of my mind for spending over $100 on a rice cooker, and when I first bought it I would have agreed with you, but it's been about 5 years since we first got the rice cooker and it was worth every single penny we spent.  It's amazing because the "Fuzzy Logic" doesn't just time the rice to tell you when it's done, it cooks it to perfection every single time.  We didn't eat a lot of rice before we had this, but now it's so easy to make and really easy to clean up afterwards and is perfect every time.  No more rice sticking to the pan!  I seriously LOVE this thing.  Anyway, back to the recipe.

I love recipes where I get to use both my crock pot and rice cooker, and this is one of those recipes!  The original recipe is from Daydream Kitchen and I mostly followed the recipe, but next time I will use a little less soy because it tasted a little rich to me.


Ingredients:

2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders

1/2 tsp black pepper

1 Tbsp canola oil

1/4 cup soy sauce

2 Tbsp rice wine vinegar

2 Tbsp ketchup
1 Tbsp brown sugar
1 garlic clove, minced
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 cup cashews

1/4 cup all purpose flour

Directions:

Combine flour and pepper in large Ziploc bag. 

Add chicken. Shake to coat with flour mixture. 
Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. 
Place chicken in slow cooker. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken. 
Cook on LOW for 3 to 4 hours. 
Add cashews and stir. Serve over rice. 

Makes 4-6 servings.



The recipe was super easy and overall was a success!  I added some chopped green onions to the top since we had some on hand.  I'll definitely be making this again soon.  Let me know if you try this recipe and what you think!
