These mint chocolate cookies are so easy and delicious! I love them!
The original recipe comes from Mint Chocolate Delights from Nestle via Very Best Baking. I followed the recipe except used only Green Mint Chips from Guittard (since they were less expensive than the Nestle brand and they have only the mint and no dark chocolate morsels) and used about 12 ounces instead of 10 ounces. This recipe is one of my favorites and it freezes great so it can be made ahead of time then popped in the oven right before serving (see my tutorial on freezing cookie dough HERE)!
2 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 10-oz or 12-oz pkg. Mint Morsels (or Dark Chocolate & Mint)
Directions
PREHEAT oven to 325° F.
COMBINE flour, cocoa, baking soda
and salt in small bowl.
Beat butter, granulated sugar, brown sugar and vanilla
extract in large mixer bowl until creamy.
Add eggs, one at a time, beating well
after each addition.
Gradually beat in flour mixture.
Stir in morsels.
Drop by
well-rounded tablespoon onto ungreased baking sheets.
BAKE for 11 to 13 minutes or until
cookies are puffed and centers are set. Be careful to not over bake.
